2 c flour (any mix of white unbleached and whole wheat)
1 1/4 c sugar
1 Tablespoon baking powder
1 t salt
1/2 c butter or coconut oil or oil
1 c milk or soy milk
2 t vanilla
1 1/2 T EnerG egg replacer, or potato flour
Mix (avoid the temptation to add too much liquid, now I realize that had been... what I was doing wrong before with other recipes), pour into a greased 13x8" pan or two 8" round pans, bake at 350 F for 40'. May take up to an hour but check frequently after 35 minutes.
