JR's Simple but Delicious Sweet Rice
3/4 cup basmati rice
3 1/2-4 liters milk
A shy 1 1/2 cups sugar
Put a little water in the bottom of your pot. When boiling add you rice and milk. This stops sticking. Add 2-3 cups milk and cook 15-20 mins. Gradually, over a period of 1 1/2-2 hours add the rest of the milk, more or less d...epending on how thick and creamy you want it. About half-way to 3 quarters of the way through, add the sugar. Remember, the longer you cook it the more creamy and luscious it turns out. You can cook it all day on low if you want. I'm not that patient! Anyhoo, that's your base. You can add a bay leaf to that or, when it cools, you can add fresh or frozen strawberries, peaches, mango etc. If using raisins, add them in after the first 20 mins. Same if you are using cardamom. I don't use it as I have very nasty memories of cardamom in sweet rice. A very simple and easy way to make a very rich and luxurious dish. Have fun!
