Black Bean Brownies: Delicious, fudgy, not at all cake-like. You don't taste the beans at all. Let me know how if you try them.
Recipe:
3 oz unsweetened chocolate, chopped
½ cup butter or oil
1 cup cooked black beans
2/3 cup chopped walnuts, toasted separated in half
1 ½ cup sugar
1.5 teaspoon vanilla
scant ¼ teaspoon salt
2 tablespoons cocoa p...owder
½ cup flour
6 tablespoons yogurt
1 teaspoon orange zest (optional)
Preheat oven to 325F. Melt the butter, turn off heat and mix in the chocolate. After a few minutes, stir until smooth. If the chocolate is not fully melted heat the pan over very low heat for 30 seconds to 1 minute.
In a pan, toast the walnuts over medium-low heat for 5 minutes.
Prepare a 8 or 9” square pan with parchment paper brushed with butter. In a food processor, combine all the ingredients except ½ of the walnuts. Puree until smooth. In a bowl, mix in the walnuts. Pour the puree into the pan, smooth out the top, and bake for 30-40 minutes, or until the brownies have set. The center should still be fairly wet. Cool completely before cutting.
